Good Luck! I would give a brief overview of the restaurant, themes, food, menu, etc. When I do this, I give just enough info so the person knows what they are getting into, but it also leaves you plenty to bring up and talk about with the person.
I would include a copy of the menu with the letter, that way the critic can think about what they will try and come with anticipation of a great meal!
Also it wouldn't be a bad idea to pump up the critic a little. Show them you know something about them and why it was you chose them as the critic of choice.
